Arusberita.id – Presiden Republik Indonesia (RI), Joko Widodo (Jokowi), menjamu para pemimpin negara ASEAN, negara mitra, dan organisasi internasional serta tamu undangan lainnya dalam Gala Dinner Konferensi Tingkat Tinggi (KTT) ke-43 ASEAN.
Jamuan makan malam tersebut diselenggarakan di Hutan Kota Gelora Bung Karno (GBK), Jakarta, Rabu 6 September 2023.
Arnold Poernomo, juru masak atau chef yang memimpin penyiapan sajian kuliner untuk para tamu negara tersebut mengungkapkan bahwa tema yang diusung dalam gala dinner KTT ke-43 ASEAN adalah ‘Nusantara Forest’.
“Untuk mendapatkan inspirasinya, kan kita sudah ada temanya ‘Nusantara the Forest’, tapi untuk inspirasi setiap hidangannya itu kita lempar untuk setiap tim menyediakan menunya,” kata Arnold dalam video yang diunggah pada kanal YouTube Sekretariat Presiden.
Arnold menjelaskan, menu bertemakan Nusantara The Forest bagi para kepala negara ASEAN dan tamu KTT tersebut berisikan berbagai jenis masakan dari sejumlah daerah di Indonesia.
Dalam daftar menu disebutkan menu pembuka (appetizer) bagi tamu-tamu VVIP yang merupakan kepala negara dan pemimpin organisasi internasional adalah Kepiting Andaliman dari Sumatra Utara, terdiri dari mud crab salad (salad kepiting), buah semangka, andaliman pepper aioli (saus aioli andaliman), pumpkin seeds (kuaci), dan baby spinach (bayam).
Sedangkan untuk tamu-tamu VIP disajikan ASEAN Assiette (“piring” ASEAN) berupa chicken mushroom terrine (ayam jamur dimasak terrine-seperti kornet), bebek betutu tart (tarbebek betutu), beef curry puff (karipap sapi), dan seafood roulade (seafood gulung).
Kemudian untuk hidangan utama (main course) bagi tamu VVIP berupa daging kecap dari Jawa terdiri dari soy glazed Lampung wagyu cheek (daging pipi sapi masak kecap Lampung), kenikir chimichurri (saus kenikir), kentang, dan kubis brussel.
Sedangkan menu serupa untuk VIP adalah nasi campur Nusantara dari Sumatra Barat dan rawon dari Jawa Timur. Sajiannya terdiri dari nasi kemangi, braised beef short rib (iga sapi) dengan kuah rawon, acar timun, sosis ayam, dan sambal ayam pop.
Untuk menu penutup (dessert) disajikan Nusantara Urban Forest (IKN) terdiri dari cokelat, spiced banana (pisang berbumbu), jasmine apple (apel melati), dan matcha moss (saus teh hijau).
Sedangkan untuk peserta gala dinner yang memilih menu vegetarian, disajikan menu pembuka (appetizer) berupa salad semangka dari Sumatra Utara terdiri dari keju ricotta, kuaci, saus mustard, dan daun kale. Menu ini khusus bagi tamu-tamu VVIP. Menu penutupnya sama seperti yang nonvegetarian.
Sedangkan untuk tamu-tamu VIP, menu vegetarian yang disiapkan adalah rujak buah Jawa berisi compressed mango (manisan mangga), pickled young papaya (acar pepaya muda), pomelo (jeruk bali), pomegranate (delima), lime gel (agar-agar lemon), tapioca crackers (opak).
Untuk menu utama versi vegetarian bagi VVIP adalah vichyosse (sup) dari Jawa terdiri dari kentang, kubis brussel, raisin (kismis), cauliflower (bunga kol). Sementara untuk tamu VIP disiapkan nasi campur nusantara dan rawon, seperti pada menu VIP nonvegetarian.
Disiapkan pula menu berisi olahan ikan untuk yang menyukai pescetarian, yakni nasi campur nusantara dan coconut curry (kari santan) yang merupakan masakan Sumatra Barat dan Jawa. Terdiri dari nasi kemangi, gulai seabass, acar timun, jamur saus kelapa, sambal pop, opak, dan minyak daun kari.
Arnold mengatakan, ajang jamuan santap malam ini juga merupakan kesempatan bagi para juru masak muda dari Tanah Air untuk unjuk kebolehan dalam meracik ramuan bagi para tamu negara.
“Request-nya adalah yang pasti makanan harus mewah, megah, nikmat, enak. Dan juga yang pasti chef muda seperti teman-teman kita yang ada di sini, kecuali beberapa yang sudah tua seperti saya, untuk diangkat dan juga diberikan panggung di acara internasional KTT ini dengan makanan Indonesia,” tandasnya.
